Perilla is a herb of the mint family, Lamiaceae. Though known to several cultures by different names, the disparate varieties are now classified under the single species Perilla frutescens. The plant overall resembles the stinging nettle, though the leaves are somewhat rounder.

Perilla, or called Shi-So, is a very popular herb in Japan and many other Asian countries. Young leaves and flowering shoots are used for cooking and pickling because of their aromatic flavor. The plant grow best under full sun or partially shading in mild climates.

Perilla seeds powder adds a nutty, milky thickness to many soups, stews, and vegetable dishes in Korean cuisine. These ground, fresh, nutty, and savory seeds are from perilla plants.

You can find perilla seeds powder in a Korean grocery store, in the grain section near the sesame seeds. Usually whole toasted perilla seeds can be found there, too, so in a pinch you can buy those and use them as a substitute. To prepare them, grind some of the seeds in a blender with some water to make a watery sludge. Then use a fine strainer to separate the liquids from the solids, and then further squeeze the solids with a wooden spoon to get every last drop. Discard the solids and use the milky liquid in your cooking.

Korean cuisine uses green leaves of the oilseed variety, which have a flavor different from shiso. It also uses the perilla seeds, known as "wild sesame", a source of perilla oil rich in ALA omega-3 fatty acids. Perilla seed can be cooked with meals, roasted, crushed to intensify its taste and/or mixed with sesame and salt.

Japanese cuisine uses the leaves, flowers, fruits, and seeds of shiso as a condiment or spice.

Perilla seed oil is obtained from the seeds of the genus perilla, usually from the species perilla frutescens.
